‘Janchi Guksu’ meaning ‘banquet noodles’, were traditionally served at Korean feasts. The long noodles symbolize long life, making it a popular meal at wedding ceremonies and 60th birthday celebrations.
Noodle Lovers' Janchi Guksu noodles 115g, premium anchovy soup base 15g (mixed with water 1:20), Noodle Lovers' sliced bean curd 10g, Green pumpkin 15g, green onion 15g, seaweed powder 10g, spicy sauce 20g, a little oil, pinch of salt
oy sauce for soup 150g, anchovy sauce 100g, green onion 100g, Cheongyang pepper 65g, fine chili powder 50g, pepper 1g
Boil Noodle Lovers Janchi Gguksu noodles in water for 2.5 to 3 minutes. When the water has boiled, add a cup of cold water. When the water boils again, add a further half cup of cold water. When this boils a third time, take off the boil, rinse the noodles with cold water, and allow to dry.
Julienne the green pumpkin and stir fry with a pinch of salt and a splash of water. When soft, dry and fry with oil.
Mix together all sauce ingredients in a bowl.
Pour hot water over the prepared noodles to re-heat. Place in a bowl and pour on the anchovy soup. Decorate with toppings. Add sauce to own taste.
